Quinoa and Lentil Salad

Ingredients

  • 2 cups quinoa
  • 1 bunch of flat leaf parsley, finely chopped
  • 1 cup mint leaves
  • 100g of baby spinach
  • 1/2 red capsicum, chopped
  • 1/2 cup craisins
  • 1 clove garlic, crushed
  • 1 cup canned lentils, drained
  • 1 vine ripened tomato, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons of olive oil


Method

  1. Combine 1 1/2 cups of water and quinoa on high heat and bring to the boil
  2. Reduce heat and cook for another 10-15 minutes until liquid is absorbed
  3. Transfer to a large mixing bowl and add baby spinach (allowing it to wilt)
  4. Add the parsley, mint, garlic, capsicum, craisins, tomato, lentil, lemon juice to the quinoa mixture. Season with salt and pepper and mix thoroughly
  5. Serve in a bowl, drizzled with olive oil
