Vegetable & Chickpea Soup
Ingredients
- 2 tbsp olive oli
- 1 leek, thinly sliced
- 1 tbsp Gourmet Garden Rosemary
- 1 tbsp Gourmet Garden Oregano
- 1 ltr vegetable stock
- 2 cups water
- 1 large potato, washed & diced
- 1 carrot, peeled and diced
- 400g can chickpeas, drained and rinsed
- 100g green beans, coarsely chopped
- 2 zucchini, chopped
- 1 cup frozen green peas
- 1 tbsp Gourmet Garden Coriander
- 1 tbsp Gourmet Garden Basil
- 1 tbsp Gourmet Garden Mint
- 1 tbsp Gourmet Garden Parsley
