Chocolate and Marshmallow Ice Cream Sandwiches
Ingredients
20 PASCALL Marshmallows
100g CADBURY Milk Chocolate Melts
24 CHIPS AHOY Cookies
12 coloured chocolate beanie lollies, or similar
12 small scoops of vanilla ice cream
Method
Using scissors cut each marshmallow into 3. Pinch the edges together to form petals
Heat half the chocolate in a bowl over simmering water until just melted. Remove from the heat and stir in the remaining chocolate until smooth. Allow to cool and thicken a little
Spread the flat side of 12 cookies with the melted chocolate and before the chocolate sets place 5 marshmallow petals onto each biscuit. Finish with a beanie in the centre of each to resemble a flower. Allow to set
Place a scoop of ice cream onto the flat side of the remaining 12 cookies then sandwich together with decorated tops. Serve immediately
Tips & Hints
The decorated cookies can be prepared well in advance and stored in an airtight container.
