Quail Salad with Fresh Mint and Lime

Ingredients

  • 400g Quail Breast Fillets
  • Marinade:1 tablespoon peanut oil
  • 1 tablespoon fish sauce
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons
  • lemon or lime juice
  • Salad: 1 cup firmly packed coriander leaves
  • 1 cup firmly packed mint leaves
  • 1/2 cup firmly packed vietnamese mint leaves (available summer months)
  • 1/2 cup firmly packed thai basil leaves
  • 1 lebanese cucumber, thinly sliced
  • 125g bean sprouts
  • 1/3 cup fried shallots (available from the asian section of your supermarket)


Method

  1. Combine marinade ingredients, brush over quail and set aside for 30 minutes
  2. Barbecue or char grill quail, skin side down for 3 minutes each side or cook to your liking
  3. Place all salad ingredients in a large bowl, except for shallots, and toss with the dressing
  4. Serve salad on plates topped with quail
  5. Sprinkle with fried shallots


Dressing

Ingredients

  • 1/4 cup lemon or lime juice
  • 2 tablespoons peanut oil
  • 2 cloves garlic, finely chopped
  • 1 red birds eye chilli, finely chopped
  • 3 teaspoons castor sugar
  • 2 teaspoons fish sauce
  • 1/2 teaspoon white pepper


Method

  1. Whisk together all the dressing ingredients
