Porcini Quail with Sultanas
Ingredients
- 30g dried Porcini mushrooms
- 2 tbsp olive oil
- 1 small onion, chopped finely
- 2 cloves garlic, crushed
- 150g Arborio rice
- 1 tsp ground cumin
- 1/3 tsp cinnamon
- 3 tbsp white wine
- 750ml hot chicken stock
- 8 Game Farm Quails, necks trimmed
- 120g sultanas
- 80 ml dry sherry
- 2 bay leaves
