Quail Braised with Leeks and Dates
Ingredients
- 4 Game Farm Quail
- 2 tbsp. olive oil
- 4 sprigs thyme
- 4 sprigs flat leaf parsley
- 1 bay leaf
- 2 medium leeks, whites and pale greens only, cleaned and diced
- 1/2 cup pitted and chopped fresh dates (about 6 dates)
- 1 cup apple cider
- 1 cup chicken stock
- 2 tbsp chopped, flat leaf parsley
- Sea salt and freshly ground black pepper
