Nicoise Salad
Ingredients
175 g (approx 30) cup fresh green beans, trimmed and blanched
1 iceberg lettuce, washed and cut into 1 /4s
1 punnet cherry tomatoes, cut into half
425 g can tuna in spring water, drained
1 /2 Spanish onion, thinly sliced
Freshly ground black pepper to taste
4 eggs, hard boiled, shelled and quartered
350 g (approx 10) baby new potatoes, steamed
1 /2 Spanish onion, thinly sliced
1 /4 cup small black olives
Method
Arrange drained lettuce on 4 plates
Divide remaining ingredients over each plate
Tips & Hints
Never microwave eggs in shells. Steam builds up too quickly inside and eggs are likely to explode.
Dressing
Ingredients
2 tbs extra virgin olive oil
2 tbs white wine vinegar or lemon juice
1 clove garlic
1 tsp dijon mustard (optional)
freshly ground black pepper to taste
Method
Whisk ingredients together for salad dressing. Drizzle over each salad and serve
