Quick & Healthy Berry Ice Cream
Ingredients
500g of frozen berries, I like strawberries
3 Tbs runny honey
250g natural or vanilla yoghurt
250g vanilla ice cream
2 - 3 leaves of fresh mint
ice cream or waffle cones (I use baby ones for the kids)
Method
Place all ingredients in a food processor & blend until smooth & creamy. You may need to scrape the sides down so it is well mixed through.

Kitchen Notes
:: I try & avoid fruit with large seeds, such as rasberries & blackberries, when blending in this quick method. To extract the seeds, boil the desired quantity down with 2Tbs of water in a pot on the stovetop until soft, then pass through a seive. Freeze the berry mixture into ice-cubes & add to the blender next time.
:: When fruit/berries look like they are about to "turn", simply dice them up & keep them in the freezer for next time you make ice-cream & play with the flavours.
To Serve
:: Top with chocolate ganache topping ladled over the ice cream & fresh berries sprinkled on top with some baby mint leaves.
:: When serving for the kids, I use "mini" cones & top it with vanilla yoghurt & sprinkles, oh, & sometimes ice-magic!
