Place pork in a large saucepan and cover with cold water. Place over high heat. Bring to boil. Reduce heat to low and simmer for 45 minutes or until pork is tender. Drain. Set aside
Heat a large wok over high heat. Add oil, season with cracked black pepper to taste. Stir fry shallots, garlic and ginger for about 2 minutes until soft, taking care not to burn
Add pork and Sweet Soy Sauce. Stir fry for about 4 minutes until sauce thickens slightly and pork is caramelised. Add pineapple. Toss to combine
