Blueberry Yogurt Crunch

Ingredients

  • 55g/2oz desiccated coconut
  • 500ml/17fl oz natural yogurt
  • 200g/7oz blueberries, plus extra to serve
  • 1/2 banana, peeled
  • 1 tsp vanilla extract
  • 2 tbsp clear honey
  • 200g/7oz granola


Method

  1. Put the coconut in a heavy-based saucepan over a medium heat and cook, stirring continuously, for 2-3 minutes until lightly toasted
  2. Put the yogurt, blueberries, banana, vanilla, honey and toasted coconut in the Vitamix machine and secure the 2-part lid. Select variable speed 5 and run for 20 seconds until combined
  3. With the machine still running, remove the lid plug and add the granola. Run for a further 5 seconds, being careful not to over-mix, so it stays crunchy. Serve topped with the extra berries


Tips & Hints

  1. This will keep in the fridge for up to 2 days.
