Sweet Potato & Sun-Dried Tomato Fritters

Ingredients

  • 350g/12oz sweet potatoes, peeled and quartered
  • 4 sun-dried tomatoes in oil, drained
  • 1 handful basil leaves
  • salt and freshly ground black pepper
  • Batter: 1 egg
  • 40g/1 1/2oz plain flour
  • 40g/1 1/2oz cornflour
  • a pinch cayenne pepper
  • 4 tbsp olive oil


Method

  1. Put the sweet potatoes in the Vitamix machine and secure the 2-part lid. Select variable speed 1. Turn the machine on and run for 5-6 seconds, then scrape down the sides and run for a further 5-6 seconds until coarsely chopped. Add the tomatoes and basil leaves and turn the machine on again. Slowly increase the speed to 6 and run for 4-5 seconds until a coarse mixture forms, using the tamper to press the vegetables into the blades. Put the vegetables in a bowl and season with salt and pepper
  2. Wash the Vitamix machine, put the egg, flour, cornflour, cayenne pepper and 125ml/4fl oz cold water in the Vitamix machine and secure the 2-part lid. Select variable speed 1, turn the machine on and slowly increase the speed to 10, then to High. Run for 10-20 seconds, then add the batter to the vegetables and mix well
  3. Heat the oil in a frying pan over a medium-high heat. Using a slotted spoon, take tablespoons of the mixture, letting the excess batter drip back into the bowl, and fry them 3-4 at a time for 2 minutes on each side, flattening each one in the pan. Remove and drain on kitchen paper. Repeat with the remaining batter to make 12 fritters, then serve


Tips & Hints

  1. Serve with: yogurt raita and watercress, these will keep in the fridge for up to 3 days.
