Ingredients
- 350g/12oz sweet potatoes, peeled and quartered
- 4 sun-dried tomatoes in oil, drained
- 1 handful basil leaves
- salt and freshly ground black pepper
- Batter: 1 egg
- 40g/1 1/2oz plain flour
- 40g/1 1/2oz cornflour
- a pinch cayenne pepper
- 4 tbsp olive oil
