Lobster and Curried Egg Sandwich

Ingredients

  • 3 hard boiled eggs, diced
  • 8 slices white or wholemeal bread
  • 300g finely shredded lobster
  • 1 tsp curry powder


Method

  1. Butter all bread but on one side only
  2. Spread curry egg mixture onto 4 slices of bread till it reaches the edges, place the other pieces of bread on top and cut crusts off and cut into fingers

  1. Makes 12 fingers


Dilmah Lemon and Lime-infused mayonnaise

Ingredients

  • 3 egg yolks
  • 1 tbsp Dijon mustard
  • 1 tbsp vinegar
  • 4 tbsp Dilmah Lemon and
  • Lime Tea concentrate


Method

  1. Place all mayonnaise ingredients except oil in a food processor
  2. With the food processor is going, pour the oil in a gentle stream until really thick. You may need a little less or more oil. Season to taste
  3. Place in a bowl with the curry powder, egg and lobster
