G & Tea

Ingredients

  • 3 tsp of Dilmah black leaf tea
  • 500ml boiling water
  • 30ml Tanqueray or Bombay Sapphire gin
  • 1 clove
  • 3 cardamom pods, bruised
  • 1 tbsp local honey or maple syrup
  • Splash of tonic water
  • Shaved ice
  • Mint sprig to serve


Method

  1. Using a 2-cup pot, brew the Dilmah tea, clove and cardamom pods with freshly boiled water
  2. Steep for 3-4 minutes and strain
  3. Add honey to taste. Allow to cool
  4. Half fill a cocktail glass with shaved ice, and fill 2/3 with the infused tea
  5. Add gin and a good splash of tonic water
  6. Add mint to serve. (optional)
