Ingredients
3 tsp of Dilmah black leaf tea
500ml boiling water
30ml Tanqueray or Bombay Sapphire gin
1 clove
3 cardamom pods, bruised
1 tbsp local honey or maple syrup
Splash of tonic water
Shaved ice
Mint sprig to serve
Method
Using a 2-cup pot, brew the Dilmah tea, clove and cardamom pods with freshly boiled water
Steep for 3-4 minutes and strain
Add honey to taste. Allow to cool
Half fill a cocktail glass with shaved ice, and fill 2/3 with the infused tea
Add gin and a good splash of tonic water
Add mint to serve. (optional)
