Green Tea Poached Chicken Sandwiches

Ingredients

  • 1 chicken breast fillet (250g)
  • 3 cups boiled water
  • 2 Dilmah Ceylon Green teabags
  • 2 sticks celery
  • 1 tbsp snipped fresh herbs
  • 1/2 cup good quality egg mayonnaise (or homemade if possible)
  • 1 tbsp Greek yoghurt
  • White pepper and salt
  • 1 tbsp caramelised red onion, chopped finely
  • 10 slices buttered white toast sliced bread


Method

  1. Steep Dilmah Green teabags in boiled water then bring back to near boiling point in a small pan
  2. Poach chicken fillet for 10 minutes
  3. Remove and allow to rest for 10 minutes
  4. 3 Mix finely sliced celery, fresh herbs, mayonnaise, Greek yoghurt, onions, and salt & pepper
  5. Dice chicken and fold into the mayonnaise mixture
  6. Spread evenly onto bread, remove crusts and cut into 3 portions


Tips & Hints

  1. Where Dilmah Ceylon Green is not available use Dilmah Pure Green tea.
