Fresh Berry Farm's Raspberry Macarons Recipe
Ingredients
90 grams of egg whites (about 3 eggs)
30 grams granulated sugar
200 grams powdered sugar
110 grams almonds
pink food coloring
Method
The day before making these Macarons, separate eggs and store the whites at room temperature in a covered container
On the day of making the macarons, preheat oven to 150°C
In a stand mixer fitted with the whisk attachment, whip the egg whites to a foam, gradually adding the sugar until you obtain a glossy meringue. (tip: don't overbeat your meringue or it will be too dry and your macarons won't work)
Combine almonds and powdered sugar in a food processor and give them a good pulse until the nuts are finely ground. Pass through a sieve
Add almond meal and colouring to the meringue and give it a quick fold to break some of the air. Fold the mass carefully until you obtain a batter that flows like magma or a thick ribbon
Fill a pastry bag fitted with a plain tip with the batter and pipe small rounds (1.5 inches in diameter) onto parchment paper lined baking sheets
Let the macarons sit out for about an hour to harden their shells a bit and bake for 8-10 minutes, depending on their size
Allow them to cool before lifting off the trays
To assemble: spread Fresh Berry Farm's raspberries in Raspberry Sauce between two of the macaron shells
