200 g/7 oz skinless white fish fillet, such as cod or pollack, cut into cubes

Method
Put the spring onions in the Vitamix machine and secure the 2-part lid. Select variable speed 1 and pulse on and off 2-3 times to chop. Transfer to a bowl and set aside
Put the miso soup, ginger and 800 ml/28 fl oz water in the Vitamix machine and secure the 2-part lid. Select variable speed 3. Turn the machine on and slowly increase the speed to 10, then to High. Run for 10 seconds to combine. Add the mushrooms. Select variable speed 1 and pulse on and off 2-3 times until coarsely chopped
Transfer the soup to a pan, add the pak choi, noodles, tamari and fish. Simmer over a medium heat for 3 minutes or until the noodles are tender and the fish is cooked. Sprinkle with the coriander leaves and serve immediately
Tips & Hints
Storage: will keep in the fridge for up to 2 days, if using the 32 oz / 0.9 l container: halve the quantities.
