Bacon and Mozzarella Open Grill

Ingredients

  • 1 Bakers Delight Pane di Casa loaf
  • 1 teaspoon olive oil
  • 150g shortcut bacon rashers, cut into short thin strips
  • olive oil cooking spray
  • 1 tsp crushed garlic
  • 300g chargrilled red capsicum, cut into thin strips
  • 150g mozzarella cheese, thinly sliced


Method

  1. Heat oil in a frying pan over medium heat. Cook bacon for 5 to 6 minutes or until golden and crisp. Remove and drain on paper towel
  2. Preheat grill on medium-high. Cut four 2cm-thick slices from Bakers Delight Pane di Casa Loaf and spray both sides of bread with oil
  3. Grill bread for 1 to 2 minutes each side or until golden. Remove from heat. Spread half a teaspoon of crushed garlic on both sides of the bread
  4. Top bread with capsicum, bacon and mozzarella. Grill for 2 minutes or until cheese melts. Serve immediately


Tips & Hints

  1. If you don't have a jaffle machine, this can be done in a sandwich grill, under a griller or even in a pre-heated and buttered non-stick pan
