These toasties are great for lunch and also cut into smaller pieces for a snack. This is a suggested filling to get you started. You can add a little pesto or a few parsley or coriander leaves if you like
Chicken & Cheese toastie
Ingredients
Chia Omega-3 Block Loaf
8 pieces Chia Omega-3 Bread
4 tbsp mayonnaise (to taste)
2 tbsp Dijon mustard (to taste)
2 grilled chicken breasts
8 slices cheese
1 cup rocket leaves
Butter or oil for grilling
Method
Spread a thin layer of mayonnaise and mustard on each piece of bread and set 4 slices aside
Slice the chicken breast into thin pieces and place 1 slice of cheese, a few slices of chicken on the bread and top with a little rocket and then the other slice of cheese
Top with remaining bread
Heat your grill or grill pan and brush both sides of the sandwich generously with butter or oil
Grill for about 5 minutes or until toasted and cheese has melted. If using a grill pan gently turn after 1 - 2 minutes
