BBQ Chicken and Hokkien Noodle Salad
Ingredients
- 400g heat and serve Hokkien noodles
- 1 store-bought BBQ chicken
- 1 cup snow peas, each sliced into 4 pieces on the diagonal
- 2 Lebanese cucumbers, halved lengthwise and sliced
- 1/2 cup coriander leaves
- 1/3 cup mint leaves, roughly torn
- 3 Spring (green) onions, finely sliced
