Chicken & Noodle Salad with Lime & Soy Dressing

Chicken & Noodle Salad
Ingredients
350g cooked chicken, torn into strips
250g vermicelli noodles
1 medium cucumber, peeled, seeded and finely sliced
2 carrots, julienned
2 spring (green) onions, finely sliced
1/4 cup fresh mint leaves roughly chopped
1/4 cup fresh coriander, finely chopped
Ground white pepper
Salt, to taste
Method
Cook noodles as instructions on the pack. Drain, and refresh under cold water
Combine the noodles, cucumber, carrots, green onions, mint and a little of the dressing in a large salad bowl
Toss gently, making sure the noodles are separated and combined with the rest of the ingredients
Season with salt and pepper, and pour over the remaining dressing, mixing well, making sure the noodles are well coated
Tips & Hints
Variation-substitute with any kind of noodles, if desired. Substitute Kikkoman Naturally Brewed Regular Soy or Gluten Free Soy if desired
Lime & Soy Dressing
Ingredients
4 tablespoons (80mL) fresh lime juice
2 teaspoons fish sauce or to taste
Pinch sugar
2 teaspoons Kikkoman Naturally Brewed Soy Sauce
1/2 long mild red chilli, finely chopped
Method
To make the dressing, combine all ingredients in a glass screw-top jar and shake well to dissolve the sugar
