Steak with Salsa Verde

Ingredients

  • 4 Scotch fillet steaks
  • 2 cups continental parsley
  • 1 cup basil leaves
  • 1 cup mint leaves
  • 3 strips anchovies
  • Zest of 1 lemon
  • 1 tablespoon of capers, rinsed with excess liquid squeezed
  • 1 tablespoon Dijon mustard
  • 100ml olive oil


Method

  1. Pre-heat chargrill to high
  2. Coat steaks with a little oil and seasoning
  3. Cook the steak to your liking and set aside to rest
  4. Place all the salsa verde ingredients in a food processor and process until smooth
  5. Divide salsa verde amongst the steaks and serve with potatoes
