Steak with Salsa Verde
Ingredients
4 Scotch fillet steaks
2 cups continental parsley
1 cup basil leaves
1 cup mint leaves
3 strips anchovies
Zest of 1 lemon
1 tablespoon of capers, rinsed with excess liquid squeezed
1 tablespoon Dijon mustard
100ml olive oil
Method
Pre-heat chargrill to high
Coat steaks with a little oil and seasoning
Cook the steak to your liking and set aside to rest
Place all the salsa verde ingredients in a food processor and process until smooth
Divide salsa verde amongst the steaks and serve with potatoes
