Top egg salad with salmon roe for a luxurious breakfast or brunch idea.

Ingredients

  • 4 tbsp light mayonnaise
  • 1 tsp grain mustard
  • 2 tsp chopped dill, plus extra sprigs for garnish
  • Salt and pepper
  • 8 hard boiled eggs
  • 4-8 slices grilled and toasted bruschetta bread
  • 4 tsp salmon roe


Method

  1. In a bowl mix mayonnaise, mustard, dill and season to taste with salt and pepper
  2. Add eggs, lightly smash with a fork and mix through the mayonnaise mixture
  3. Spoon onto the toasted bread and garnish with salmon roe and extra dill sprigs. Serve immediately


Tips & Hints

  1. Hard-boiled eggs are easiest to peel right after cooling. Cooling causes the egg to contract slightly in the shell
