Serve this inventive egg recipe with boiled new potatoes as a side dish. For a vegetarian option replace bacon with diced onions.

Ingredients


Method
  1. Lightly spray a non-stick pan with cooking spray. Add diced bacon and cook 2-3 minutes or until starting to brown
  2. Add cream and cook until reduced by half and to a thick consistency
  3. Add spinach and cook until wilted, season to taste
  4. Serve spinach in a shallow bowl top with soft poached eggs
