Combine baked beans, tomato and eggs on a pizza for a healthy breakfast and brunch recipe idea.

Ingredients

  • 4 small wholemeal flat bread
  • 1 x 400g tinned salt reduced baked beans
  • 8 cup mushrooms, sliced
  • 2 Roma tomatoes, cut into eighths
  • 4 eggs
  • 4 slices prosciutto , roughly torn


Method

  1. Pre heat oven to 180°C/ 160°C (fan forced)
  2. Place flat breads on to a lined baking trays. Divide baked beans, mushrooms and tomatoes amongst the 4 flat breads
  3. Bake 10 minutes or until mushrooms and tomatoes are almost cooked
  4. Remove pizza from oven and crack one egg onto each pizza. Top with prosciutto and return to oven. Cook 4-5 minutes or until eggs and prosciutto are cooked to your liking
  5. Serve immediately


Tips & Hints

  1. Substitute prosciutto with thinly sliced rindless bacon
