This is an easy and delicious dish that's sure to please the whole family and it's great to serve for brunch with friends. You can also use smoked salmon in place of ham.

Signature Brunch Eggs on Toast

Ingredients

  • Chia Omega-3 Block Loaf (White or Wholemeal)
  • 1 cup sauteed spinach leaves
  • 4 pan fried or roasted tomatoes
  • 4 thick slices of ham
  • 4 pieces of Chia Omega-3 Bread
  • Butter (for toast)
  • 4 eggs
  • A few fresh herbs (optional)
  • Salt & pepper (to taste)


Method

  1. Saute spinach in a frying pan with a little butter and salt. Pan fry or roast the tomatoes
  2. Prepare ham or smoked salmon and set aside
  3. Meanwhile cook the eggs to your liking (sunny side up, poached or scrambled), then toast and butter the bread
  4. Place ham or smoked salmon on each piece of toast followed by 1/4 of the spinach and tomatoes on each
  5. Top with 1 egg and sprinkle with fresh herbs, if desired
