Vegetable Medley Stir Fry

Vegetable Medley

Ingredients

  • 2 tablespoons (40mL) vegetable oil
  • 1/2 medium red onion, thinly sliced
  • 1/2 long red chilli, halved, seeds removed, then thinly sliced
  • 1 medium carrot, cut into thin match sticks
  • 1 yellow capsicum, seeded, and cut into thick strips
  • 100g broccoli, separated into small florets
  • 100g sugar snap peas
  • 2 sticks celery
  • Coriander leaves, to garnish


Method

  1. Make the Stir Fry Sauce first
  2. Heat oil in a wok or large fry pan over medium-high heat
  3. Add onion and chilli and cook for about 30 seconds
  4. Add the vegetables and stir fry for about 2 minutes
  5. Stir in sauce and cook just long enough to heat the sauce
  6. Top with coriander
  7. Serve at the table in the wok for people to help themselves


Tips & Hints

  1. Substitute any vegetable in season. Do not overcook the vegetables, they are meant to be crunchy.


Stir Fry Sauce

Ingredients

  • 85mL Kikkoman Naturally Brewed Soy Sauce
  • Juice half lemon
  • 2 cloves garlic, crushed
  • 50g ginger, finely grated
  • Pinch sugar (to taste)


Method

  1. To make the sauce, combine all ingredients in a bowl and set aside


Tips & Hints

  1. Kikkoman Sweet Chilli, Ginger & Soy Marinade & Sauce can be substituted for our regular Soy Sauce if desired
