Salt Pepper Quail Breast with Aioli and Charred Lime Cheeks

Ingredients

  • 1 Pkt Quail Breasts
  • 1 Pkt Bamboo skewers
  • 1 tsp salt
  • 2 tsp pepper
  • 1 heaped teaspoon Chinese 5 spice
  • 5 tsp cornflour (if you want to make this recipe gluten free use make sure you buy un wheaten cornflour)
  • 2 Litres of peanut oil for frying
  • 200ml mayonnaise
  • 2 cloves garlic (finely chopped)
  • 1 lime (cut the cheeks of so there are 2)


Method

  1. Mix the mayonnaise with the garlic
  2. Grill the 2 lime cheeks
  3. Heat oil until it spits when adding food or heat fryer if you have one to 180°C, coat the quail breasts with the spiced cornflour and shake off excess, fry the skewers until golden brown (approximately 2 minutes each) and drain on paper
  4. Serve with lime cheeks and garlic soy mayonnaise


Tips & Hints

  1. When serving skewers as a canape make sure you take a drop bowl with you for the guests to put the sticks in it
