Spatchcock

Ingredients

  • 1 pack Game Farm deboned spatchcock (300 - 350g)
  • 1 teaspoon chilli powder
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon ground cinnamon
  • 1 clove garlic, crushed
  • 2 tablespoons lemon juice


Method

  1. Thread each spatchcock onto a skewer
  2. Combine the spices, garlic and lemon juice and brush generously over the spatchcock
  3. Heat a grillpan or frypan over medium heat and cook the spatchcock for 5 minutes on each side or until cooked through


Salsa

Ingredients

  • Chargrilled corn kernals
  • 1 tomato, diced
  • 1 small red onion, sliced
  • 1 red chilli, finely chopped
  • Coriander leaves
  • Lime juice


Method

  1. Combine salsa ingredients


To Serve

Ingredients

  • Tortillas
  • Guacamole
  • Shredded Lettuce


Method

  1. Serve the spatchcock with salsa, tortilla, lettuce and guacamole
