Ingredients
- 800g baby red skin potatoes, halved
- 1 red capsicum
- 1 large eggplant
- 400g button mushrooms, trimmed
- 1 bunch baby carrots, trimmed
- Olive oil cooking spray
- 2 tbs extra virgin olive oil
- 1 orange, rind finely grated, juiced
- 1 tsp Dijon mustard
- 125g marinated goats cheese
- Toasted flaked almonds & chopped parsley, to serve
