Chicken Mince
Ingredients
25 grams Vermicelli noodles
1 tbsp olive oil
2 tsp finely grated ginger
1 medium red chilli, finely chopped
1 garlic clove, crushed
100 grams chicken mince
Method
Cover vermicelli in boiling water and leave aside to soften. In a non-stick frying pan over medium-high heat, add olive oil, ginger, chilli, garlic and chicken mince
Fry off ingredients until chicken has browned slightly and is cooked through, season with salt & pepper and set aside
Dressing & Salad
Ingredients
1 tbsp Balsamic vinegar 4 drops fish sauce
2 tsp brown sugar
1 wedge of lemon (squeezed)
1 wedge lime (squeezed)
1 tsp olive oil (can use sesame oil)
1 tbsp sweet chilli sauce
Salt & pepper to taste
Salad: 1/2 avocado, sliced
1 med shallot, sliced
5 cashews roughly chopped
1/2 med carrot, grated with a potato peeler
1 med mushroom, (can use shiitake mushrooms) sliced
1 small handful of bean shoots
1/2 med cucumber, finely sliced length ways
4 snow peas, finely sliced length ways
3 tablespoons roughly chopped coriander
1 small handful rocket
Method
Combine all dressing ingredients in a bowl and whisk to combine
Pre-heat a griddle pan on medium-high heat. Slice the Turkish roll in half, lightly spray the inside of the roll with olive oil spray and place on griddle pan and toast until light golden brown
Starting with avocado on the base of the bun, and working your way down the list build your sandwich with all the ingredients, top with chicken mix and dress liberally, place bun lid on top and serve
