These Air Fryer Smashed Garlic & Herb Parmesan Potatoes are irresistibly crispy, golden, and bursting with bold flavours. The perfect balance of crunchy edges and fluffy insides makes these potatoes absolutely addictive.
Ingredients
1kg baby chats potatoes
3 tbsp olive oil
⅓ cup Perfect Italiano Garlic & Herb Parmesan, plus extra for sprinkling
1 tbsp chopped chives to serve
Method
Boil, steam or microwave potatoes until fork tender. Drain well and transfer to a baking tray.
Using the base of a tumbler or potato masher, press down on potatoes until just squashed but still holding together.
Mix together olive oil and Parmesan and spoon over potatoes.
Place in air fryer in a single layer and cook for 5 minutes at 200°C. Turn over and cook for a further 5-8 minutes or until crisp and golden. Cook in batches as necessary. Sprinkled with extra Parmesan and chopped chives and serve immediately.
Tips & Hints
Cook times will vary between air fryers. Check the manufacturer’s recommendations. Start checking food at the minimum cook time and adjust it to suit your air fryer.
If the air fryer basket is too small to cook the potatoes at one time, cook in batches of two. Transfer cooked potatoes to a bowl and keep warm under foil.
Alternatively, cook potatoes in a hot 200°C oven for 25-30 minutes.
