In a bowl combine the basil, ginger and oil. Then season the chicken with salt and pepper and coat with the basil mixture
Spray a non-stick fry pan with cooking spray and place on medium-high heat
Add the chicken and brown for about 3 minutes on each side, then turn again, add the tomatoes and continue to cook on medium-low heat until the chicken is done and the tomatoes almost ready to collapse, about 5 minutes more
Steam or boil broccoli or asparagus and serve with the chicken and tomatoes
