Ingredients
- 4 small chicken breasts or 4 veal schnitzels
- 3/4 cup plain flour, seasoned with salt and pepper
- 1 1/4 cups breadcrumbs
- 1/3 cup fine dry breadcrumbs
- 2 teaspoons Gourmet Garden Thyme
- 2 teaspoons grated lemon zest
- 2 eggs, beaten
- 1/2 cup olive or other oil
- 3/4 cup tomato passata or fresh tomato sauce
- 2 teaspoons Gourmet Garden Basil
- 2/3 cup grated mozzarella cheese
