Quick Moroccan lamb stir-fry
Ingredients
- 1/2 cup dried pitted dates
- 1 tablespoon vegetable oil
- 1 red onion, cut into thin wedges
- 1 large carrot, finely sliced
- 1 red capsicum, seeded and finely sliced
- 500g lamb sirloin (backstrap), thinly sliced
- 200g packet Passage to Morocco Moroccan Honey Lamb Simmer Sauce
- coriander leaves, to garnish
- couscous, to serve
