Quick Moroccan lamb stir-fry

Ingredients

  • 1/2 cup dried pitted dates
  • 1 tablespoon vegetable oil
  • 1 red onion, cut into thin wedges
  • 1 large carrot, finely sliced
  • 1 red capsicum, seeded and finely sliced
  • 500g lamb sirloin (backstrap), thinly sliced
  • 200g packet Passage to Morocco Moroccan Honey Lamb Simmer Sauce
  • coriander leaves, to garnish
  • couscous, to serve


Method

  1. Cut dates in half and place in a heatproof bowl. Cover with boiling water and set aside
  2. Heat 2 teaspoons of the oil in a wok over a high heat. Add onion, carrot and capsicum. Stir-fry for 5 minutes. Remove from wok
  3. Add remaining oil to wok. Add lamb and stir-fry 2 minutes or until browned
  4. Add cooked vegetables, drained dates and Simmer Sauce to lamb and stir for 1 minute
  5. Garnish with coriander. Serve with couscous


Tips & Hints

  1. Use thinly sliced chicken breast or thigh fillets in place of lamb
