An easy and quick dessert the whole family will love. This recipe uses the KitchenAid Platinum ExactSlice Food Processor.

Ingredients

  • 440g can pie apricot
  • 2 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 40g softened butter
  • 1/2 cup caster sugar, extra
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup self-raising flour
  • 100mls milk
  • 2 tablespoons sour cream or Greek style yoghurt
  • Icing sugar, for dusting


Method

  1. For best results use the KitchenAid Platinum ExactSlice Food Processor
  2. Preheat the oven to 180°C (160°C fan forced). Spread the apricots over the base of an oven proof 1 - 1.25 litre dish or divide between smaller individual dishes. Sprinkle with sugar and cinnamon
  3. Attach the all purpose blade to the work bowl of the food processor. Add the butter and extra sugar, cover and pulse for 1 minute or until mixture is light and fluffy and sugar has dissolved
  4. Add the egg and vanilla and pulse for 15 seconds. Add the flour, milk and sour cream and pulse until smooth
  5. Spread batter over the fruit, allowing some fruit to show through. Bake in the centre shelf of the oven for 30 - 35 minutes or until firm and lightly golden
  6. Stand for 5 minutes before serving dusted with icing sugar. Delicious served with ice cream or cream


Tips & Hints

  1. Pie apple or peach can also be used instead of apricots.
