Frozen yoghurt is simple - all you need are a few ingredients, a blender, a freezer and it's done! This recipe uses the KitchenAid Artisan Diamond Blender.
Ingredients
2 punnets strawberries, hulled
2 teaspoons lemon juice
500g Greek style plain yoghurt
3 tablespoons honey
1 teaspoon finely grated lemon rind
Method
For best results use the KitchenAid Artisan Diamond Blender
Place the berries into the blender jug with the lemon juice. Cover, select the chop function and process for 5 seconds
Add the yoghurt, honey and lemon rind. Recover, select the chop function and process for 5-10 seconds or until it reaches the desired consistency
Pour the mixture into a shallow container that is suitable for freezing. Cover with cling film
Freeze for 2 hours, remove from the container, return to clean and dry jug, cover and select the chop function and process for 10 seconds
Return mixture to the container, cover and freeze for a minimum of 4 hours or until ready to serve
Serve in scoops with extra fresh berries if desired
