Herb Crusted Beef with Horseradish

Ingredients

  • 2 cloves garlic, crushed
  • Salt and pepper, to taste
  • 1/2 cup finely chopped parsley
  • 3/4 cup dried breadcrumbs
  • 1/4 cup oil
  • 2 tablespoons ZOOSH Just Got Laid Free Range Egg Mayonnaise
  • 1-1.25 kg piece beef girello/round roast
  • 1 1/4 cups ZOOSH Just Got Laid Free Range Egg Mayonnaise, extra
  • 1/3 cup horseradish cream
  • 1/4 cup chopped basil
  • 2 cloves garlic, crushed
  • 8 Turkish bread rolls, halved and chargrilled
  • 50g salad greens or spinach leaves
  • 1 small red onion, sliced


Method

  1. In a bowl mix together the garlic, seasonings, parsley, breadcrumbs and oil. Brush the beef all over with the mayonnaise then roll in the crumb mixture
  2. Place the beef on a paper lined tray and bake in a very hot oven 220°C for 15 minutes. Reduce the temperature to 180°C and bake for a further 30 minutes. Allow to cool then refrigerate overnight. Thinly slice once cold
  3. Combine extra mayonnaise with the horseradish, basil and garlic. Top the base of each roll with the salad leaves, thinly sliced beef and red onion. Spoon the mayonnaise over the sliced beef then enclose with remaining bread half
  4. Serve immediately
