1/2 cup ZOOSH So Fabulous Kickin' Coleslaw It's Creamy & Tangy
juice of 1 lemon
salt and freshly ground black pepper
2 cups coleslaw mix
2 chicken breast fillets, halved horizontally
olive oil spray
4 rashers bacon, cooked until crisp and kept warm
4 turkish rolls, split and toasted, for serving
basil leaves, for serving
Method
Mash the avocado then combine with the dressing and lemon juice. Season to taste
Place the coleslaw mix in a serving bowl, pour over the dressing and toss to combine. Cover and refrigerate until required
Spray the chicken with the oil and then barbeque on a grill plate for 3 minutes each side or until cooked and golden. Spoon the coleslaw onto the base of the roll, top with the chicken, bacon and basil leaves then sandwich together. Serve immediately
