Passionfruit Mango Tiramisu

Ingredients

  • 500g PHILADELPHIA Block Cream Cheese, softened
  • 1/2 cup pure icing sugar
  • Pulp from 4 passionfruit (1/3 cup)
  • 15 sponge finger biscuits
  • 1/3 cup Cointreau liqueur, combined with 1/3 cup orange juice
  • 2 mangoes, peeled and thinly sliced
  • Fresh fruit, to serve
  • Pulp of 3 passionfruit extra, to serve


Method

  1. Beat the PHILLY and sugar with an electric mixer until smooth, stir through the passionfruit
  2. Quickly toss 5 of the biscuits in the combined liqueur and juice, then place into the base of a fully lined 24 x 13 x 6cm loaf pan. Top with 1/3 of the PHILLY mixture and half the mango
  3. Repeat the process with another 5 biscuits, 1/3 of the PHILLY and remaining mango. Top with remaining 5 biscuits and remaining PHILLY. Cover and chill overnight before serving
  4. Gently remove the Tiramisu from the pan. Carefully remove the lining paper, cut into 8 slices and place onto serving plates with fresh fruit. Drizzle with additional passionfruit pulp and serve immediately
