Lamb Stir-Fry with Capsicum, Onions & Ginger

Ingredients

  • 1 tablespoons (20mL) vegetable oil
  • 450g lamb stir fry strips
  • 1 large red onion, cut into thin wedges
  • 1 yellow capsicum, seeded and sliced
  • 4 Spring (green) onions, sliced
  • 2 cloves garlic, crushed
  • 1 teaspoon fresh ginger, grated
  • 2 teaspoons fresh chilli, chopped
  • 1/2 cup (125mL) salt reduced chicken stock
  • 1/4 cup (60mL) Kikkoman Naturally Brewed Soy Sauce
  • 2 teaspoons cornflour
  • Steamed rice, or soba noodles, to serve


Method

  1. Preheat oil in a wok or fry pan. Stir fry lamb in batches, until brown on all sides. Transfer to a plate
  2. Add onions, capsicum, Spring onions, garlic, ginger and chilliand stir fry for 2 minutes
  3. Combine stock, soy sauce and cornflour and add to pan
  4. Simmer for 2 minutes, stirring well until sauce thickens slightly. Return lamb to pan, making sure it is well coated with the sauce
  5. Place in individual serving bowls and serve with rice or noodles


Tips & Hints

  1. Lamb can be replaced with beef or chicken stir fry strips.
