Place the soy sauce, chicken stock, ginger star anise and cinnamon sticks in a large saucepan over high heat and bring to the boil
Add chicken breasts and turn off heat. Cover and set aside for 40 minutes to poach. (The chicken will continue cooking in the hot liquid)
Remove chicken from the poaching liquid and transfer to a clean chopping board. Thinly slice across the grain, cover with foil to keep warm
Meanwhile, steam or cook snow peas in normal manner. Divide chicken equally among 4 serving bowls. Strain the poaching broth and drizzle a little over the chicken. Top with snow peas. Serve immediately

Any number of vegetables can be used in this recipe, alternatively, poach the chicken and serve in a salad or sandwiches
