Smoked Chicken Caesar Salad

Ingredients

  • 3 thick slices sourdough bread (150g), broken into 2cm chunks
  • Olive oil spray or garlic flavoured oil
  • 100 g lean rindless bacon, cut into julienne strips
  • 1 baby cos lettuce, rinsed and leaves torn
  • 200 g smoked chicken, thinly sliced
  • 4 eggs, poached
  • 1/3 cup ZOOSH All hail the Light Great Caesar Dressing
  • Shaved Parmesan, for serving
  • Freshly ground black pepper, to taste


Method

  1. Place the bread in a single layer on a baking paper lined tray and spray with oil. Bake in a hot oven 200°C for 8-10 minutes or until golden and crisp
  2. Cook the bacon in a small non-stick frypan until crisp
  3. Arrange the lettuce in a large bowl or platter and top with croutons, chicken and poached eggs. Drizzle with the dressing and finish with bacon, Parmesan and a sprinkling of pepper. Serve immediately
