Ingredients

  • 2 large potatoes, peeled and quartered
  • 2 x 200g thick beef fillet steaks
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 190g jar Sacla Green Asparagus Sauce
  • 2 slices prosciutto
  • 1/2 punnet cherry tomatoes
  • 2 tablespoons balsamic vinegar
  • 40g butter


Method

  1. Boil potatoes in a pot of water until tender. Drain, mash and keep warm
  2. Season beef with salt and pepper. Heat oil in a heavy-based roasting dish and brown beef on both sides
  3. Top each piece of beef with 1 tablespoon Sacla Green Asparagus Sauce and wrap in a slice of prosciutto
  4. Arrange tomatoes around beef and bake at 200°C/180°C (fan forced) for 10 minutes. Remove beef and keep warm
  5. Deglaze pan with balsamic vinegar and reduce by half. Turn off heat and mix in butter to form a sauce
  6. Mix remaining Sacla Green Asparagus Sauce into mashed potato and season to taste. Serve beef on top of asparagus mash with roasted tomatoes and drizzle with balsamic sauce
