Glazed Orange Polenta Cake

Ingredients

  • 125g PHILADELPHIA Block Cream Cheese, softened
  • 125g butter, softened
  • 1 cup caster sugar
  • 3 eggs, lightly beaten
  • Finely grated rind of 2 oranges and oranges reserved
  • 2 cups ground almonds
  • 2/3 cup polenta
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 cup apricot jam
  • Juice of 1 orange, extra


Method

  1. BEAT the PHILLY, butter, and sugar with an electric mixer until smooth. Gradually beat in the eggs, beating well between each addition then fold through the rind, almonds, polenta and sifted dry ingredients
  2. REMOVE the pith from the oranges and cut into 1/2 cm thick slices and arrange on the base of a greased and base lined 23cm round cake pan. Spoon the mixture over the oranges in pan
  3. BAKE in a moderate oven 180°C for 35-45 minutes or until cooked when tested. Allow cake to cool on a wire rack for 10 minutes. Warm the jam and orange juice in a saucepan, stirring until smooth. Do not boil
  4. TURN the cake out onto a serving plate and brush all over with apricot glaze. Serve warm or cool


Tips & Hints

  1. Cake Making Tips: Do not open the oven once the cake has been placed in it as this could result in a dramatic temperature drop and cake drop.
