Ingredients
- 2 tablespoons oil
- 500g green prawns cutlets
- 2 tablespoons red curry paste
- 2 bok choy, washed and quartered
- 100g sugar snap peas
- 1/2 large red capsicum, sliced
- 3 spring onions, cut into 3cm lengths
- 1 large clove garlic, sliced
- 3/4 cup coconut milk
- 1/4 cup The Good Nut Crunchy Peanut Butter
- 1/2 teaspoon paprika
- 1/2 teaspoon brown sugar
- Juice of 1/2 lime
- Steamed rice, for serving
- Lime wedges, for serving
- Coriander leaves, for garnish
