Creamy Lamb Biryani With Cardamom Spiced Rice

Ingredients

  • 2 tablespoons oil
  • 2 large onions, sliced
  • 3 cloves garlic, crushed
  • 1 tablespoon freshly grated ginger
  • 1/2 cup mild curry paste
  • 1 kg diced lamb
  • 1 teaspoon garam masala
  • 1 whole red chilli, optional
  • 400g can diced tomatoes
  • 1 tablespoon oil, extra
  • 1/3 cup blanched almonds
  • 2 cups basmati rice, rinsed well and drained
  • 6 cardamom pods
  • 4 cups boiling chicken stock
  • 1/4 cup sultanas
  • 250ml PHILADEPHIA Light Cream for Cooking
  • 1/2 cup coriander leaves
  • Pappadums, for serving


Method

  1. HEAT oil in a large saucepan and saute onions, garlic and ginger until fragrant. Add curry paste and cook for a further minute. Add lamb and toss well until browned and coated in curry paste
  2. STIR in garam masala, chilli and tomatoes and bring to the boil. Reduce heat, cover and simmer for 1 1/2 hours or until meat is cooked and sauce is thickened
  3. HEAT extra oil in a saucepan and lightly toast the almonds. Add rice and toast for 1 minute. Add cardamom and stock, cover with a tight fitting lid, reduce heat and simmer for 15 minutes until liquid is absorbed
  4. REMOVE from heat, place a double thickness of tea-towel between saucepan and lid and stand for 15 minutes. Gently stir in sultanas
  5. STIR PHILLY and coriander through the cooked lamb and serve with rice and pappadums
