Cinnamon Rice Pudding With Spiced Oranges

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cinnamon stick
  • 2 star anise
  • 2-3 oranges, peeled and sliced
  • 2 cups cold, cooked jasmine or long grain rice
  • 125g Light PHILADELPHIA Spreadable Cream Cheese
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract


Method

  1. COMBINE the sugar and water in a saucepan and bring to a boil, stirring occasionally until the sugar has dissolved
  2. ADD the cinnamon and star anise and boil for 6-8 minutes or until syrupy but not coloured
  3. ADD the oranges and simmer for 2 minutes. Remove from heat and cool
  4. COMBINE the rice with the PHILLY, sugar, cinnamon and vanilla. Chill
  5. SPOON the rice into 4 serving glasses, top with the oranges and drizzle with syrup. Serve immediately

  1. The rice is delicious served with any seasonal fresh fruit.
