Guacamole Cups

Ingredients

  • 24 gow gee wrappers
  • Olive oil spray
  • 250g cream cheese
  • 1 large avocado, roughly chopped
  • 1/2 small red onion, finely chopped
  • 2 tablespoons lemon juice
  • 1/4-1/2 teaspoon Tabasco sauce
  • Salt and white pepper, to taste
  • 2 tablespoons finely chopped red capsicum
  • 1 tablespoon finely chopped red onion, extra
  • 1 tablespoon thinly sliced green pitted olives
  • 1/2 cup ZOOSH Dats Amore Light Italian Escape Dressing


Method

  1. SPRAY both sides of the gow gee wrappers with oil and press into 24 mini muffin pans. Bake in a moderate oven 180°C for 12 minutes or until crisp. Stand 5 minutes then remove to a wire rack. Cool
  2. BEAT the PHILLY in a bowl until smooth then add the avocado and mash with a fork until almost smooth. Stir through the onion, lemon juice, tabasco and seasonings until just combined, then spoon into the cups
  3. COMBINE the extra capsicum, extra onion, extra olives and dressing then spoon over the guacamole. Serve immediately


Tips & Hints

  1. Cups can be assembled and refrigerated up to 2 hours ahead.
