You definitely won't hear "I don't like vegetables" with this recipe. Roast potatoes, pumpkins and sweet potatoes are taken to another level when simply dressed with Birch & Waite Balsamic Vinaigrette. And your kitchen will smell heavenly too.
Ingredients
1/2 cup Birch & Waite Balsamic Vinaigrette
6 potatoes
2 sweet potatoes
400g pumpkin
2 onions, cut into wedges
1 red capsicum, cut into 2cm pieces
Method
Peel and prepare potatoes, sweet potatoes and pumpkin as you regularly do. Brush with oil and bake in a hot oven
Half way through cooking, add Birch & Waite Balsamic Vinaigrette, onion and capsicum to partially roasted vegetables. Carefully toss vegetables to coat in Balsamic Vinaigrette
Return to oven to finish baking, turning vegetables one more time before they are cooked
