This scrambled eggs recipe and sprint onion tortilla recipe is a quick, easy and delicious breakfast or brunch recipe the whole family will love.
Ingredients
1 tbsp olive oil
2 cloves garlic, chopped
1 - 2 chillies, seeds removed and chopped
8 tomatoes, large and ripe, chopped
Pinch of sugar to taste
Salt and freshly ground black pepper
8 eggs
1/2 cup skim milk
1 tbsp margarine
1 cup sweet corn
8 tortillas
1/2 cup green onion, sliced
2 tbsp coriander, chopped
Method
Heat fry pan and add oil, garlic, chilli. Fry gently while stirring
Add chopped tomatoes, season with salt and pepper and add sugar; simmer until soft and thickened, stirring occasionally
Whisk the eggs and milk in a bowl and season. In a separate pan melt the 3 teaspoons of margarine then add the egg mix gently stirring with a spatula until just cooked. Set aside
Place sweet corn and remaining margarine into a microwave safe container. Cook , in microwave on high for 45 seconds
Place tortillas into serving bowls, top with tomato, eggs, sweet corn, spring onion and coriander
Tips & Hints
Light beating produces more dense scrambled eggs. Vigorous beating aerates the eggs, resulting in lighter fluffier curds
